I had work today and Celia went to daycare. Work is pretty busy right now. I had things under control before Thanksgiving, and this week several things have come up and I'm suddenly swamped again. So, rather than discussing that let's talk about the fun stuff happening at home!
I did try that lemon bar recipe I mentioned on Monday. They're good but I'd like to improve the crust, maybe using shortening instead of Earth Balance. I really don't like Earth Balance in some baked goods. It gives things an off taste sometimes. The filling is really good though- sweet and a little tart.
For dinner tonight I made Sweet Potato and Lentil Salad from here. I had precooked lentils from Trader Joe's and made the wheat berries, dressing, and chopped the potatoes yesterday. So at dinner time tonight everything was prepped. Talk about a healthy recipe! Tasty, too. It's definitely something I would make again, but of course the big question was whether Celia would touch it. The answer: negative. Oh well. She was quite a little stinker at dinner time tonight.
Rudolph the Red-Nosed Reindeer was on last night. I love watching the old Christmas specials. Mickey's Christmas Carol was my favorite, but it's not on anymore. I'm tempted to get it on dvd, because it seems to be very hard to find nowadays.
Celia willingly wore her mittens for the first time yesterday. She had the influence of Nana and Grandpa being there though, so we'll see if she will wear her mittens for me. She always has to give Mommy a hard time, of course. I'm learning that it's not easy to be the mother of a very strong-willed toddler. Let's see what else we've been up to...

And tonight I had the corner kitchen cupboard open, and Celia went behind the door and called the space a "house"! So cute. She is developing such an imagination.
That's about all! Time to eat lots of popcorn and read a book.



That lentil salad looks really good I'll have to try it.

We love the original rudulph and hermie too! I have seen Mickey's Christmas Carol at Walmart before wonder if they still have it? I betcha Amazon online has it they have every movie....LOL
