major productivity

I've had a seriously productive morning. Celia went to daycare for a few hours. I went for a 7 mile run, which included an unanticipated .4 mile uphill. Oops. Sometimes my curiosity gets the better of me, I decide to check out a new road, and I end up doing things like running up unexpected steep hills or going too far because I'm always curious about where a road ends or what's around the next bend. Anyway, after the run I got lunch ready ahead of time, got dinner going in the slow cooker, did laundry, vacuumed, showered, and cleaned up the kitchen. Yep, I got a lot done in those few hours.

I may have spent a few minutes ogling my two new pairs of Nike Vomero 4s that the nice UPS man brought me last night. I ordered two because they're discontinued and I don't like the newer model. Have to make sure I have a fresh pair for the marathon. Celia was very excited to try them on.


So, for lunch today I made
JoLynn's grilled veggie nachos. This is a vegan recipe. I have a fear of vegan "cheese" because, let's face it, nothing can really compare to the deliciousness that is real cheese. Nevertheless, if I do eventually want to be eating a vegan diet or as close to it as possible, I have to give up cheese. I could really do without it most of the time, since I hardly ever have it anyway. I can't remember the last time I ate cheese. But, it would be nice to have something cheesy every so often- like a big plate of nachos!


These were really, really good! The sauce was very easy to make. I didn't grill the veggies, just diced some pepper and zucchini and cooked them in a skillet. There are also beans, tomato, and avocado. I forgot scallions, but they would make this even better. Everything was prepped this morning, so as soon as Celia went down for her nap I assembled the nachos in a dish and let them get nice and toasty in the oven. A very fancy lunch for me! Celia would probably like them too, but the sauce has nuts in it.

  1. Hi Sarah! Since it's been summer I've been a bit lazy on my blogging. I've been gradually playing catch-up. I'm so glad you liked the Nacho cheese!

    Great info on the sunscreen isn't it.
    For the last couple of years we've been using
    California Baby and use Alba sometimes.
